I had an attack of inspiration a month or two back, and experimented with some flavours I wanted to try. I threw in a bit of this and a dash of that, and actually having the foresight to right it down, which I’m glad I did, because the were pretty much on the scrumptious side.
Essentially they are pumpkin and spiced cupcakes with a cream cheese and maples syrup frosting. And gluten free. I’m sure they’d work just as well with normal flour, but I am trying to do all my cupcakes GF now, as it seems probable that both Tusk and Ratbag might have a bit of an intolerance.
So, when I had the opportunity to catch up with some fabulous women the other day, and since I finally had my Kenwood Chef working again, I took it as an excuse to commit cake.
The result under the cut…
Something new I’m thinking of doing in this and future posts is a breakdown of what went wrong / right or What I’ve Learnt For Next Time.
What I’ve Learnt For Next Time:
- Discover crystallised ginger had gone AWOL. Had to get Chickie to race out and grab me some, so the wet mix sat for about 3/4 hour before cooking, meaning the rise was a bit … lacking.
- Am yet to decide about the leaves. I did them the night before and laid them over various curves in order to give them some ‘body’, but they were a little too dry and it made placing them together more difficult. Also, I would like to get a decent ‘veiner’ so the leaves have a bit of texture happening.
- Cream Cheese Frosting with maple syrup FTW! OMGSoGood!

I do love it! I have lots of the attachments an use it *all* the time.
I bought mine nearly 10 year ago off eBay, and it’s probably nearly 40 years old and slowly dying. It’s had a few parts replaced and repaired, but I am aware that I need to replace it in the next few months. So I have been shortlisting.
The KitchenAid comes very highly recommended, and is quite pretty. In fact, most KA owners are a bit like Apple owners 🙂 Very one eyed 🙂 (and also, generally never seem to have used a Chef)
So after some research, and reading up of Choice articles,I am probably going to get another Chef…just not sure which one yet.
